The West Midlands has a rich cuisine. Pork scratchings, grey peas and bacon, orange chips...the world famous balti.

But perhaps our delicacies aren’t always particularly elegant - yet they are undeniably tasty. I’m here at B:Eats at the ICC in Centenary Square to experience one of our proudest culinary achievements - the Brummie Bacon Cake.

Foodies from across the region were invited to get involved preparing this traditional dish - a recipe close to head chef Lee Hollington’s heart. He says: “I consulted with my grandfather who’s in his 90s now and is a chef. He is a big inspiration for me and the reason why I am a chef. He was a chef in the army during World War 2.

“This recipe for the Brummie Bacon Cake has come from his recipe - so it’s a very traditional and old fashioned dish that you don’t see very often. We’ve adapted it to fit in with what we’re doing here but it’s very local, very Birmingham based and very unique to ourselves.”

Local prominent foodies all banded together, getting stuck in making the classic dish. Birmingham has a strong food scene, hosting a wide range of restaurants celebrating cuisines from across the world.

Palates may have evolved over the years with a greater variety of ingredients, but dishes such as the Brummie Bacon cake tell a much deeper story of who we are and where we came from.

Nicole Evans, Commercial Director for B:Music, says: “Today we’re hosting a Brummie Bacon Cake masterclass. The Brummie Bacon Cake is our house specialty and it’s proven to be very interesting for many people who come to visit us and they’ve really enjoyed sampling this traditional delicacy.”
