Choose from hickory smoked duck with a baby pear poached in red wine and sweet carrot puree, or salmon ceviche with lime-poached asparagus and dill oil. Or goats cheese comes baked in filo, with plum and ginger chutney, before moving on to the hard-to-resist seared scallop and celeriac risotto with green pea puree and black pudding crumble. The wild mushroom and sun blushed tomato risotto is an ideal alternative for vegans.
