Customers at the revamped Bullring site will be able to enjoy a new outdoor terrace, ample indoor restaurant and revamped private dining room located on its upper level.

Rouge’s Executive Chef Bruno Bella has also crafted a new menu which will include a variety of classic French dishes, reimagined with a modern twist; from Rouge-favourite scallop starter - baked in garlic and parsley butter with parmesan crumb - to new, vegan-friendly dishes including cauliflower steak with harissa hummus, toasted chickpeas and pomegranate and a Beyond Meat pretzel burger.

What’s been said about the rebrand?

Speaking about what Birmingham can expect from the new concept, Steve Worrall - Chief Operating Officer at Rouge, said:“We’re seriously thrilled to be opening our newest Rouge restaurant in Birmingham. Since the highly successful launch of first trial site in Haywards Heath last year, we’ve had our eyes on national and Birmingham was the obvious choice for our first Midlands-based opening.

“Rouge will provide its guests with a modern slice of Parisian culture and cuisine: Birmingham is a thriving, cultural hub that is host to one of the best food and drink scenes in the UK, and I can’t wait to see the reaction of both our loyal guests and new customers.”

General Manager of the Bullring cafe, Thamir Abdul Hameed, said:“We cannot wait to bring to Rouge to life in Birmingham: introducing new products such as a signature Champagne cocktail range as well as retaining guest favourites such as the Beef Bourguignon, we’re so excited to be serving up a brand-new menu and experience for our guests.

I’m so proud of our entire team and are confident that they will continue to deliver an incredibly high standard of service and look forward to what the future holds in 2022 and beyond.”
