A stylish new bar and restaurant located within Hilton Birmingham Metropole has officially opened its doors in Solihull near the Birmingham Airport.

The new waterfront eatery - Brightsmith On The Water - is part of the hotel’s multimillion-pound refurbishment. The bar and restaurant, which opened on 9 September, serves a delicious menu of small and large plates, brunch at weekends and an innovative cocktail menu at the 789-bed hotel.

Hilton Birmingham Metropole opened in 1976 and is the largest residential conference hotel in the UK outside of London. Located on the N.E.C complex and just five minutes from Birmingham International Airport and Birmingham International Train Station, the hotel and the new bar and restaurant has much to offer.

The food and and drink at Brightsmith On The Water is inspired by the artisan makers at the heart of Birmingham’s world-renowned Jewellery Quarter. The kitchen, headed by Chef Peter Daly, will deliver a menu of unique, mouth-watering and beautiful dishes – all overlooking Pendigo Lake.

A nod to the traditional ‘Brightsmith’ - a crafter specialising in highlighting the beauty of the ‘bright’ metals, silver, brass, and tin - the interiors of Brightsmith showcase brass and metallic features throughout. The eatery aims to draw attention to the best the region has to offer – local produce and quality ingredients, carefully curated to show off Birmingham‘s exciting emerging food culture.

What else does Brightsmith On The Water offer?

A 120-cover bright, airy space lined with soft teal velvet banquettes, high and low seating, panelled wooden and geometric tile floors, and statement metal dividers, alongside lush planting, floral patterns and textures, and a green colour palette; the design of the space creates a sense of bringing the outside in.

In the centre of the room Brightsmith On The Water boasts a feature wood panelled, underlit bar that looks out onto the 50-cover, heated all-weather terrace, welcoming summer after-work drinks and dinner al fresco with colleagues or friends.

The destination bar and restaurant also offers a hit list of chart anthems to get the party started, juxtaposed with chilled and soulful house playlists for watching the sunset and as the bar warms up.

Drink and dining at Brightsmith On The Water

Cocktails will be shaken all evening and into the early hours while DJ’s will provide great music. A creative cocktail list, including signature serves of L.B.D (Black vodka, prosecco and bitters); Paloma Thyme (tequila, lime, thyme syrup and pink grapefruit soda); Cherry Wood Smoked Old Fashioned (bourbon, bitters and Maraschino syrup), and The Brum Brûlée (pineapple rum, Campari, pineapple juice and lime juice), alongside a range of premium beers, lagers, wines, Champagnes and spirits.

The restaurant offers a range of small plates for the table, including chicken lollipops with a harissa dip; scallop & crab in a bisque with chorizo oil hollandaise and caviar; truffle and rosemary marinated beef fillet, and pea croquettes filled with black bomber Cheddar. Large plates offer all the crowd pleasers from a sharing cote du boeuf rib-eye with triple cooked rosemary and garlic chips, through to a pork belly vindaloo curry ‘Goa style.’

Brunch in style

On Saturday, Brightsmith opens its doors early to welcome the party for bottomless brunch. A not to be missed weekend fixture.

You can expect bottomless Aperol spritz, bottled beers and prosecco, alongside a choice of brunch cocktails such as the fruity and floral Poppet - Chase gin and pear liqueur muddled with fresh cucumber, shaken with apple and lemon juice, and sweetened with the bar’s homemade Earl Grey syrup, and garnished with dried rose buds.

There’s also Strawberry Basil Sour - Chase gin and strawberry liqueur vigorously shaken with fresh strawberries, basil, lemon juice and Aquafaba; and a Passion Fruit Martini topped with a light pineapple foam.

Welcome the weekend with indulgent brunch dishes from a classic smashed avocado medley, or stacked buttermilk pancakes; through to a flat ‘Khobez’ bread, and Huevos Rancheros.
